What’s In Every Share
Here’s what to expect in a Rafter 9 Ranch beef share. Every share is the same balanced mix — no cut sheet to fill out.
Ground Beef
Lean, hearty ground beef in 1–1.5 lb packs. The largest share of every order.
Roasts
Chuck roast, rump roast, sirloin tip roast, brisket.
Steaks
Ribeye or rib steak, New York strip or T-bone, top sirloin, filet mignon, plus tri-tip and flank when available.
Short Ribs & Specialty
Short ribs, stew meat, soup bones. Nothing wasted.
Percentages are by weight and vary a little by animal. Every animal has only a couple of briskets, tri-tips, and flank steaks, so those are shared across orders.
Sampler & Select boxes ship UPS 2-day: ribeye, NY strip, sirloin, ground beef, and a roast selection — pre-portioned and vacuum-sealed.
Before You Reserve
Why is your price per pound higher than ranches that sell by hanging weight?
Because we only charge for the beef you take home. Hanging weight is the carcass after harvest, before it’s cut — bone, fat, and trim included. Finished weight is the packaged beef you take home. About 55–65% of hanging weight ends up in your freezer, while bone, fat, and trim are roughly 35–45% of hanging weight.

Can I pick my cuts?
Every share comes as a set mix so every customer gets a fair share of the steaks and specialty cuts. For a smaller order, try the Sampler or Select box.
Is the beef grass-finished or grain-finished?
We offer both. Every animal is raised on irrigated Fallon pasture; ask us which finish is available when you reserve.
How much freezer space do I need?
Plan on about 1 cubic foot for every 35 lbs of beef. A Sampler or Select box fits in any kitchen freezer, a 1/4 takes about 4 cubic feet, and a 1/2 about 8 — a chest freezer.
How long does frozen beef keep?
Per foodsafety.gov, ground beef is best within 3–4 months and steaks and roasts within 4–12 months. Those are quality guidelines, not safety limits — beef kept at a steady 0°F stays safe.
Can I transfer my deposit?
Yes. Deposits are transferable — if your plans change, you can pass your spot to someone else. Email mark@rafter9.ag to arrange it.
Where do you deliver or ship?
We deliver to Fallon, Reno/Tahoe, Salt Lake City, Boise, June Lake, and San Diego. Everywhere else in California, Nevada, Oregon, Idaho, Utah, and Arizona, we ship frozen by UPS 2-day ground so it arrives cold. Enter your ZIP in the checker above to confirm we can reach you.
Can I pick up locally?
Yes. Local pickup is in Fallon, at a meeting spot we set up with you when your beef is ready.
