When you reserve beef from Rafter 9, you know exactly where it came from. Our cattle are raised on alfalfa hay and Carson River pastures — no feedlot, no hormones, no mystery. You get USDA-inspected, dry-aged beef cut to your specifications.

How It Works
Pick your cut, pay your deposit, and we’ll reach out to confirm your spot and estimated processing date. When your animal is ready, you walk through the cut sheet with us directly — steaks, roasts, grind ratio, all of it. After processing, you pick up or we arrange delivery.

What’s In Your Beef?
Every beef share is cut to your specs. Here’s what to expect:
Ground Beef
20–35 lbs per quarter (~75–100 lbs per half). Standard or fine grind — your call.
Roasts
Chuck roast, arm roast, rump roast, brisket. Cut and wrapped to your preferred size.
Steaks
Ribeye, New York strip, sirloin, T-bone, flank steak. Thickness and pack size your call.
Specialty
Short ribs, beef shanks, stew meat, soup bones. Nothing wasted.
Sampler & Select boxes ship UPS 2-day: ribeye, NY strip, sirloin, ground beef, and a roast selection — pre-portioned and vacuum-sealed.
